Investigating Enzymes The effect of enzyme concentration, on enzyme activity. Aim: To explain how changing the concentration of an enzyme affects the enzymes activity. We are using apple as the substrate, which determined why we used pectinase as the enzyme. Pectinase is a general term for enzymes that break down pectin a polysaccharide substrate that is found in the cell walls of plants. Therefore pectinase enzymes are commonly used in processes involving the degradation of plant materials, such as speeding up the extraction of fruit juice from fruit, including apples. Prediction: I predict that the more concentrated the enzyme is, the more it will break down the apple and the more juice will be produced. I think this because a higher concentration will result in more reactions taking place. Method: Firstly, we used a sharp knife to cut up ‘chips’ of apple, which weighed ten grams and all had the same surface area.
