Trans Fats and the American Have you ever wondered why the words “Trans fat” are so publicized? This author has heard words uttered all over the media and seen them printed on nearly every food label without fully understanding their true meaning. Well, gaining an understanding of Trans fats and their risks is of the utmost importance to any of us that do not want to die ten to twenty years earlier then we have to. Trans fats, also known as trans fatty acids, are solid byproducts of fat formed when good oils, such as soybean oil, have been hydrogenated. Hydrogenation is the process of heating liquid vegetable oils in the presence of metal catalysts and hydrogen. This makes the carbon atoms bond in a straight line causing it to be a solid at room temperature, helping to solidify it into products such as margarine.
