The Potato "Only two things in this world are too serious to be jested on, potatoes and matrimony." Irish saying From Incans to highlanders, from legends to famines and from one side of the Earth to the other, the potato has seen it all. The potato, although usually cast aside as an ugly, deformed, dirty spud, has made huge contributions to the development of the Western World. Its journey across the globe began in the 1530’s in modern day Peru. The Spanish were searching for gold, silver or precious gems, but what they found would be more useful and rewarding than they could have imagined. High in the Andes the Spaniards had come to rob the Incan’s of their riches, and in entering a small village came across corn, beans and other agricultural riches, among them an oddity that the Incas called papa. This new found vegetable came in many different shapes, sizes and colours. Unbeknownst to the Spanish at the time, this was the most important part of the Incan’s diet.
