Lipids are a special kind of naturally occurring substance. They are in soluble in water and grouped together based on their solubility with fat solvents like ether, benzene, chloroform, and carbon tetrachloride. Lipids are separated into different classes based on their structure. Two classes that we dealt with in our experiment were simple lipids and steroids. Simple lipids include fats and oils (esters of fatty acids and glycerol) and waxes (esters and alcohols with high molar mass). Steriods are 17carbon units with four fused rings. Fats and oils are very similar except that fats are solid in room temperature while oils are not. Both fats and oils are trimesters (triaclyglycerol) that is derived from a glycerol molecule and three fatty acids. A saturated fatty acid with no double bonds is saturated (with hydrogen) while one with double bonds is unsaturated. A fatty acid can have many double bonds in it; that would be called a polyunsaturated fatty acid.
